Wood, a precious raw material

Damy's demanding specifications:
In cooperage, as in wine, the quality of the raw material conditions that of the finished product. The Damy Cooperage uses a very strict wood selection process, in close collaboration with their stave-makers, in order to provide wine-growers, cellar masters and oenologists with the very best oak species from the greatest forests.

We therefore offer a representative range of the various French and foreign species of oak:

  • Oak from the forest of Allier, Vosges, Nièvre, Burgundy and Central France
  • Oak from Eastern European Countries
  • American oak

Our additional guarantee:
Our wood is dried in the open air for at least 24 months. This natural drying process aims to :

  • Reduce the humidity level in the wood, to reach between 14% and 15% humidity
  • Extract composites, which would badly affect the wine
  • Raise the potential of aromatic components

Natural ageing of staves is a real stage in the maturing process.
