Reception


Upon receipt of your new barrel :

  • Storing barrels in an enclosed, odourless and free from drafts.
  • The humidity should be at least 65%.
  • The trunk kept in its protective plastic packaging can be kept for several months.
  • The wicking of new barrels to reception is unnecessary and may lead to a reduction before fermentation méthionol (cooked cabbage).

Commissioning

The keg is delivered ready for use, but it is preferable to verify its physical structure:

  • incorporate approximately 20 to 30 liters of hot water in the barrel,
  • shake the keg in all directions to moisten the inside and let it stand so that the water stays 1-2 hours each fund.

This method was used to prepare a properly using minimal water.

    

Ageing

 Duration

  • The pipette is the only judge!
  • A mistake not to commit: rack the wine during its making wood, the wood melts, blends and fades over time!

Consumes

  • A new oak absorbs between 4-6 liters of wine to fill.
  • For information consumes a normal year is between 3-5%, or about 10 liters of wine.

    

An emergency ?

The new barrels are guaranteed for 1 year but the oak, and noble materials, living and not "synthetic" has a few hazards that Cooper curbs early warnings.

Some interventions extreme emergencies

  • Wormhole: carve a "pencil lead" oak, place the tip very sharp in the hole and cut flush with the stave.
  • Breakfast node: rub a fat (suet food ...) on the running order to staunch the flight.
  • Porosity end of stave (on chamfer): in press with the grain of the wood, the tip of a nail and place the tip of a "pencil tip" of oak cut flower, lightly sand by hand.
